Everyone is talking about regional and seasonal products, but how exactly does this work? We asked Tirolean conference businesses to explain in what way they support local farms and how the products are used:

Products from local producers

As an Austrian Eco-label certified establishment, Hotel Wirtshaus Post in St. Johann is especially keen to work with regional producers and to promote quality. This is reflected in the menu and delicatessen, the Postmarkt.
The Postmark’s flagship products have always been Postbrot bread and Brunnhof meat, however, the assortment also includes numerous other delicacies such as oils, pasta, pesto, sweets, cosmetics with flowers and spices with mountain herbs, as well as selected kitchen and decorative items that come from small-scale manufacturers. Guests will find everything their heart desires at the Postmarkt, with quality being the top priority.

Postbrot Bread Sommelier

One of four bread sommeliers in Austria can be found in the St. Johann in Tirol region He pursues his passion for baking bread with his unique sense of taste. This includes the excellent Postbrot bread, which literally reflects the history of Tirol. Now, as back then, it is characterised by its very long shelf life and aroma, a mixture of mildly sour, sweetish, with a hint of caramel. The dough is made from old bread, which gives the crust of the loaf a delicious flavour.

Brunnhof – a trusted partner

Here too, as so often in Tirol, the distances are very short. Brunnhof Farm is less than three kilometres away from Hotel Wirtshaus Post.

Ensconced in the midst of green meadows and fresh mountain air in the wide valley floor of the Tirolean Leukental, Brunnhof has been a working farm ever since 1905. Formerly a small holding with mixed livestock, it has now developed into a modern, sustainable and ecological farm. In order to maintain the high-quality standards, the animals graze on alpine pastures in summer and return to the cattle sheds in winter to be fed exclusively with feed produced in harmony with nature.

A visit to the vegetable field

Chef Daniel Stade of the AC Hotel Innsbruck wants to know exactly where the vegetables, lettuce, potatoes and spices come from, so he visited a farmer’s vegetable field in Rum.

AC Hotel receives fresh fruit and vegetables daily from Tirolean supplier, Johann Ischia & Co. The long-standing family business is the connecting link between Tirolean agriculture and the hospitality industry. Owner Karl Josef Ischia, also known as Charlie, has a great passion for high-quality, locally grown and honest food and advocates these values. He cultivates relationships with local farmers and food buyers personally and allows producers and buyers like chef Daniel Stade and vegetable farmer Josef Schirmer to get to know each other and see where products come from and in which kitchen they end up.

“The world is our guest” in the mountain village of Alpbach

Alpbach’s “village concept” as a venue combines traditional values with sophisticated quality. The village is characterised by its unique timber building style, as well as the involvement of the community and local producers and hosts, who ensure a special feel-good experience.
Congress Centrum Alpbach (CCA) and its mostly regional partner businesses, are consciously committed to sustainability issues, not only ecologically, but above all in the social sphere.
Quality and regionality have top priority in the catering at CCA and the gastronomy, with particular emphasis placed on high-quality and seasonal products, for example Floberry, fresh juices, jams and natural products from Reith im Alpbachtal, cheese from the hay-milk dairy in Reith in Alpbachtal or yoghurt from Zottahof in Alpbach. Congress participants from all over the world can choose between traditional dishes and international cuisine, carefully created with regional ingedients.

Regionality from breakfast to dinner

The menu at Restaurant Daniels in the Swarovski Crystal Worlds is always regional and seasonal. Most of the products are sourced from suppliers in the region and partnerships are based on many years of cooperation and characterised by appreciation and trust.

The eggs from Goggei, which are certified with the “Qualität Tirol” seal of quality, travel a distance of only 3.3 kilometres until they arrive in the kitchen and restaurant patisserie.
Fresh fruit and vegetables are supplied by Niederweiser from Innsbruck and the muesli for Sunday brunch comes from Verival in Langkampfen.
However, it is not only the food that is regional, but also the choice of drinks. Tirolean brewery, Zillertal Bier, produces the Nine Five beer exclusively for Swarovski Crystal Worlds.
Coffee roasting company Unbound from Wattens is literally a neighbour and provides the perfect complement to the cakes and tarts in the patisserie. Chabeso is also on the menu, a lemonade sourced locally from Wattens.

Werkstätte Wattens: Regionally refined coffee beans paired with high-quality dairy products from the neighbourhood

The Werkstätte Wattens business and creative centre has been sourcing the milk for its coffee and other delicacies for event and conference guests and the community from the Egger family’s Winderlhof farm on Mount Wattenberg since 2021. Their premium milk forms the basis for the high-quality, flavoursome products that the family produces on their farm. Pasteurised whole milk, yoghurt in eight varieties, curd and buttermilk are just some of the products in their range.

Sustainable, transparent & high-quality: Unbound coffee roasters, the coffee roasting company founded by Tirolean Florian Mayrhofer in 2017 in the Wattens workshop, focuses on gentle refinement, fair trade and direct contact with the farmer. Unbound coffee roasters create unique, unmistakable flavours – ranging from exotically fruity, to nutty and mild. The perfect energy booster during a meeting break.

Hotel Stadt Kufstein

Hotel Stadt Kufstein and the associated elephant Café, Bar & Bistro have made it their business to work exclusively with local partners and, above all, regional products. The created value remains in the region and supply chains are short.
In addition to regional origin, special attention is also paid to qualitative, ecological and social criteria, as well as local processing, proportion of regional ingredients used and inspection bodies.

Thoroughly regional

AREA 47, the largest outdoor adventure playground in Europe, not only made sure that the rooms and furnishings were sourced from local carpenters in the Ötztal Valley, but also used regional products for the interior. Cosmetics from Pure Green in Roppen, sheep’s wool pillows from the sheep’s wool centre in Umhausen and apples straight from Heiming. Breakfast in the Lakeside Restaurant is served with honey from AREA47 bees, which contribute to biodiversity, while brown trout from Längenfeld in the Ötztal are dished up for dinner.
